  • Do not buy fireworks from unlicensed retailers.
  • Only buy fireworks that comply with safety standards.
  • Always keep fireworks in a closed box.
  • Take them out one at a time and close the box.
  • Never put fireworks in your pocket.
  • Let your neighbours know you will be having a display, especially if they are elderly or they have pets or children.
  • Avoid setting fireworks off late at night.
  • Ensure your pets are safe.
  • Carefully follow the instructions on each firework.
  • Never go back to a lit firework.
  • Light fireworks one at a time, at the end of the fuse, and at arm’s length.
  • Light sparklers one at a time and wear suitable gloves, even when lighting them.
  • Never give sparklers to a child under the age of five.
  • Never throw spent fireworks on a bonfire.

Sticky honey sausages

Serves four

Cooking time: 30 minutes

YOU NEED:

  • Pack of six pork sausages
  • 40g honey or golden syrup
  • 40g wholegrain mustard
  • 20g sugar
  • 10ml vinegar

METHOD:

  1. Add the sugar and water to a pan and heat to dissolve the sugar.
  2. Once dissolved, add the mustard, honey and vinegar and bring to a boil.
  3. Simmer for two to three minutes until nice and sticky.
  4. Cook the sausages and add the mustard syrup to the pan. Cook for a further couple of minutes.
  5. Serve with bread buns or as they are with fried onions.

A sticky toffee apple pudding is the perfect dessert for the occasion

Preparation time: 20 minutes

Cooking time: 35 minutes

YOU NEED:

  • 130g dates, stoned and finely chopped
  • 1 tsp bicarbonate of soda
  • 2 tsp instant coffee
  • 175g sunflower spread
  • 150g demerara sugar
  • 2 large eggs
  • 175g self-raising flour
  • 300g cooking apples, peeled, cored and grated
  • 150g soft brown sugar
  • 100ml single cream

METHOD:

  1. Preheat the oven to 180C/gas 4. Lightly oil six 200 to 225ml individual pudding tins or ramekins.
  2. Place the dates in a bowl with the bicarbonate of soda, coffee and 175ml of boiling water and leave to stand.
  3. Cream together 75g of the sunflower spread and demerara sugar until pale and fluffy.
  4. Then add the eggs one at a time, beating well.
  5. Sift in the flour and fold in with the apple. Drain dates and fold in.
  6. Divide the mixture between the prepared tins, put in the oven and bake for 30 to 35 minutes until risen and springy to the touch.
  7. While the puddings are cooking, make the toffee sauce by heating 100g spread and the soft brown sugar and cream together gently in a pan over a low heat.
  8. Stir constantly, until the sugar crystals dissolve and you have a smooth sauce.
  9. Serve the sauce drizzled on top or on the side.
